Buttermilk Fried chicken and pumpkin waffles with bourbon maple butter syrup. A perfect Southern inspired Autumnal dinner. I like to marinate the chicken overnight in the fridge. Inspired by Sharon of A Perfect Feast https://aperfectfeast.com/fried-chicken-and-pumpkin-waffles/

Fried Chicken Marinade:

2 lbs chicken tenders

2 cups buttermilk

2 Tablespoons salt

1 teaspoon pepper

1 teaspoon paprika

Flour Seasoning Mix:

2 cups flour

1 Tablespoon salt

2 teaspoons freshly ground black pepper

1 Tablespoon onion powder

1 Tablespoon granulated garlic

1 Tablespoon paprika

1 teaspoon cayenne pepper

Oil for frying, peanut, avocado, vegetable, etc.

Pumpkin Waffles:

2 cups flour

¼ cup brown sugar

1 Tablespoon baking powder

1 Tablespoon pumpkin pie spice

¼ teaspoon salt

1 cup pumpkin puree

¾ cup milk

½ cup sour cream

2 eggs

½ cup butter, melted

Bourbon Maple Butter Syrup:

½ cup butter

¼ cup bourbon

1 cup maple syrup

1 teaspoon pumpkin pie spice

Measure buttermilk and seasonings in a ziplock bag and marinate chicken tenders in the fridge for 3 hours or up to overnight.

Measure flour and seasonings in a gallon ziplock bag and set aside until ready to fry chicken.

Preheat your waffle iron and give it a little spray of oil. In a large mixing bowl with flour, brown sugar, baking powder, pumpkin, pie, spice, and salt together. Top with pumpkin puree, milk, sour cream, eggs, and melted butter. Stir until combined. Cook the waffles according to the waffle maker manufacturers instructions and keep warm.

When ready to make the fried chicken, pour oil, about 2 inches, into an electric skillet or a regular frying skillet and heat to 350°. Remove the marinated chicken from the brine and shake a few pieces at a time in the flour mix bag. Fry the chicken tenders in batches until golden and cooked through (165°). Remove to a paper towel covered plate to drain, and keep warm.

To make the bourbon maple butter syrup, add butter, bourbon, maple syrup, and pumpkin pie spice into a large Pyrex or other microwavable bowl. Microwave for two minutes.

Place a waffle on a plate to serve, top with two or three chicken tenders and generously spoon bourbon maple butter over the top.
