Coconut Milk Jasmine Rice

Creamy jasmine rice cooked in coconut milk. Great with passionfruit bbq salmon (linked below).


2 cups jasmine rice 

1 15-oz can coconut milk 

1 ½ cups water 

2 Tbsp butter 

1 tsp salt

1 tsp onion powder 

Pepper, to taste 

Place rice, coconut milk, water, butter, salt, onion powder, and pepper in a saucepan (or in a rice pot). Cook over medium-low heat for 10 minutes, then reduce to low heat for 20-25 minutes or until cooked through and the rice is softened.
