Passion Fruit BBQ Salmon
Prep Time: 20 mins | Cook Time: 35 min | Course: Dinner | Serves: 4
Passion fruit pineapple jam mixed with barbecue sauce and brushed over salmon; grill and then top with more of the sauce. The perfect marinade and accompaniment to a salmon dinner. Great with coconut milk rice (linked below).
2 lbs salmon, Atlantic, sockeye, or steelhead
½ cup lilikoi pineapple jam, I used the Bonne Maman brand
1 cup BBQ sauce
1 green onion, chopped
Mix jam and barbecue sauce together and divide between two small bowls, one with a serving spoon for the table and one with a pastry brush for grilling. Brush a generous amount of sauce over the fish to marinate at room temperature, about 15 minutes before grilling.
Preheat barbecue to medium-high, about 400-450*. Place salmon skin-side down (if there is skin) on the grill grates ( or on a piece of oiled tinfoil first) and close the lid. Cook for 3-5 minutes for an internal temp of 120* for medium-rare or until the salmon is done to your liking. Allow to rest for 10 minutes and garnish with chopped green onions.
