Cranberry Apple Salad with Red Onion and Pecans

Cranberry apple salad with thinly sliced red onion, pecans, and apricot stilton cheese crumbles. Dressed with a cranberry sauce vinaigrette. 

5 oz mixed baby greens

1 cup cranberries, halved

2 apples, 1 chopped/ 1 thinly sliced

1 cup pecans, chopped (candied would be nice)

3 oz crumbled apricot stilton or gorgonzola cheese

Cranberry Sauce Vinaigrette:

⅔ cup olive oil

⅓ cup pear, cranberry, or other fruit flavored white balsamic vinegar

⅓ cup cranberry sauce

1 tsp dijon mustard

Garlic salt and pepper, to taste

Mix the cranberry sauce vinaigrette together and pour liberally over the salad.
