Cranberry Pear Avocado Salad with Cranberry Sauce Vinaigrette

Pears, fresh cranberries, avocado, and red onion topped with pumpkin spice pumpkin seeds and mixed with a cranberry sauce vinaigrette. A perfect holiday salad, you can use leftover homemade or canned cranberry sauce.

5 oz mixed greens

2 pears, 1 diced\1 sliced

1 avocado, diced

½ cup fresh cranberries, halved

½ cup red onion, diced

2 green onions, sliced

¼ cup pumpkin spiced pumpkin seeds, or pumpkin seeds (I found at Trader Joe’s)

2 oz crumbled gorgonzola cheese, optional

Cranberry Sauce Vinaigrette:

⅔ cup olive oil

⅓ cup pear, cranberry, or other fruit flavored white balsamic vinegar

⅓ cup cranberry sauce

1 tsp dijon mustard

Garlic salt and pepper, to taste

In a large salad bowl, toss the mixed baby greens with diced pear, cranberries, avocado, red and green onions, and gorgonzola cheese crumbles together. Top with sliced pears, and pumpkin seeds.

Whisk the olive oil, balsamic vinegar, cranberry sauce, dijon, garlic salt, and pepper together. Store any unused portion on a mason or lidded jam jar in the fridge.
