Southwest Chicken Fritters

Southwest chicken and pepper jack cheese fritters are comfort food with a zing. Serve with chili mayonnaise.
3 chicken thighs, chopped small
½ onion, diced fine
3 cloves garlic, minced
Salt and pepper, to taste
⅓ cup sour cream
⅓ cup salsa
1 ½ cups pepper jack cheese shreds
¼ cup cornstarch
2 Tbsp olive oil
Chili Mayonnaise:
⅓ cup mayonnaise
1 tsp chili powder
½ lemon, juiced
Cut chicken thighs into small pieces, and add onion, garlic, salt, pepper, sour cream, salsa, pepper jack cheese, and cornstarch. Mix together well and refrigerate for 30-60 minutes. When ready to fry, heat 1 tablespoon olive oil in a skillet over medium heat. Scoop about ⅓ cup of the fritter batter into the skillet and gently tap to flatten a bit. Cook for about 4-5 minutes per side. Transfer cooked fritters to a paper towel-lined platter and keep warm, cook the next batch adding oil as needed.
Mix mayonnaise, chili powder, and lemon juice together and serve with the hot fritters.
