Cream Cheese Potato Broccoli Soup

Creamy potato broccoli soup with veggies and cream cheese.
1 Tbsp olive oil
1 onion, diced
1 cup carrots, diced
1 cup celery, diced
6 cups water
3 large russets, diced
2 cups milk or half n half
8 oz cream cheese
Salt n pepper, to taste
1 tsp thyme
4 cups broccoli florets
Parmesan cheese
In a Dutch oven or stockpot, saute onion, carrots, and celery in the olive oil over medium heat, stir until the onion is translucent. Add water and potatoes, cook for 10 minutes or until the potato is fork tender. Stir in the milk, cream cheese, salt, pepper, and thyme. Stir in the broccoli and cook for 5-6 minutes. Top with parmesan cheese just before serving.
