Lemon Garlic Rice

Delicious and flavorful lemon garlic rice with dill, butter, and just the right amount of seasoning. Make in a rice pot, or bake in the oven.  Inspired by the Silver Palate Girls in their book The Silver Palate Good Times Cookbook.

1 ½ cups short grain (such as homai, or your favorite) rice

¾ tsp salt

Pepper, to taste

3 cloves garlic, minced

1 lemon zested

2 Tbsp dill, chopped

2 Tbsp butter

2 ½ cups chicken stock


Layer rice, salt, pepper, garlic, lemon zest, dill, butter, and chicken stock in a rice cooker or 9.13 pan. Cook on the quick rice setting and stir midway through the cook cycle (or if baking in a 9.13 baking dish, cover tightly with foil and bake at 375* for 20 minutes).
