Creamy Cucumber Red Romain Wedge

Red romain cut into elegant thin wedges with cucumbers, red onion, cherry tomatoes, and a creamy cucumber dressing. Delicious with oven-toasted baguette slices covered with melty cambozola cheese.
1 head of red romaine lettuce, sliced into thin wedges
½ red onion, diced or cut into thin rings
1 cucumber, peeled, quartered, and sliced
1 pint cherry medley tomatoes, halved
2 Tbsp chopped dill, optional
Creamy Cucumber Dressing:
½ cucumber, sliced (about 1 cup)
2 Tbsp red onion, diced
1 cup mayonnaise
⅔ cup cottage cheese
2 Tbsp milk
¼ cup lemon juice
1 tsp dried dill, 1 Tbsp if fresh
1 tsp dried parsley
¼ tsp salt
Ground pepper, to taste
Place lettuce wedges on a platter and sprinkle with a melange of onion, cucumber, cherry tomatoes, and dill, if using. Drizzle creamy cucumber dressing over all just before serving.
Layer cucumber, red onion, mayonnaise, cottage cheese, milk, lemon juice, dill, parsley, salt, and pepper in a blender and blend on high until blended and creamy.
