Creamed Spinach With Shiitake Mushrooms

Creamed spinach with shiitake mushrooms and a dash of nutmeg...extreme comfort food.


4 Tbsp butter

1 cup shiitake mushrooms, diced

1 small onion, diced

3 cloves garlic, minced

2 Tbsp flour

¼ tsp salt

Garlic salt, to taste

Pepper, to taste

Nutmeg, a dash (freshly ground nutmeg makes all the difference)

40 oz fresh spinach

1 cup heavy cream


Melt butter in a dutch oven or extra large skillet over medium heat. Add in the mushrooms, onion, garlic, flour and seasonings. Stir for a minute, reduce heat to low and add in the spinach a little at a time until it wilts enough to all fit in the pan. Cover with a lid and let cook for 3 minutes. Stir in cream and cook until slightly thickened; correct for seasoning.
