Mahi-Mahi Burgers with Mango Salsa

4 brioche or other favorite buns, split

4 mahi-mahi fish fillets

Garlic salt and pepper, to taste

2 Tbsp avocado oil


Coleslaw:

8 oz tri-color coleslaw

¼ cup cilantro, chopped

2 green onions, sliced

¼ tsp salt

Pepper and garlic salt, to taste

2 Tbsp mayonnaise

½ lemon, juiced


Mango red onion salsa:

2 cups mango, diced

1 small red onion, diced

¼ cup cilantro, chopped

½ lemon, juiced

1 green onion, sliced

Garlic salt and pepper, to taste


Avocado Mayonnaise:

1 avocado

¼ cup mayonnaise

Garlic salt and pepper, to taste

½ lemon, juiced

Dry mahi-mahi in between paper towels and season with garlic salt and pepper. In a skillet, warm the olive oil over medium-high heat. Cook the fish for approximately 2 minutes a side, checking for doneness in the middle of the thickest part of the fillet. Keep warm until you're ready to assemble.

Mix together all the coleslaw ingredients in a serving bowl.

Stir the mango salsa ingredients together in a small serving bowl. 

In a small bowl, mash the avocado and remaining ingredients together. 

Spread the bottom buns with the avocado mayonnaise and a hearty spoonful of the slaw, top with fish and a large spoonful of the mango salsa. Spread the top bun with avocado mayonnaise and place on top.
