Creamy Cucumber Dressing

A creamy cucumber and dill salad dressing lightened up by using cottage cheese for part of the mayonnaise. Inspired by Susan Branch in her cookbook Heart of the Home.

1 persian cucumber, sliced (about 1 cup)

2 Tbsp red onion, diced

1 cup mayonnaise

⅔ cup cottage cheese

2 Tbsp milk

¼ cup lemon juice

1 tsp dried dill, 1 Tbsp if fresh

1 tsp dried parsley

¼ tsp salt

Ground pepper, to taste

Layer cucumber, red onion, mayonnaise, cottage cheese, milk, lemon juice, dill, parsley, salt and pepper in a blender and blend on high until blended and creamy.
