Creme Fraiche Mushroom Pasta

Mushrooms sauteed in butter with garlic, then stirred into cooked pasta with creme fraiche and green onions. Simple and amazing! I’ve used shells and a new pasta, trofie, that I found at Trader Joe’s, but use your favorite pasta shape. 2 Tbsp olive oil

½ cup butter

1 lb cremini, shiitake, or other mushrooms, sliced

4 cloves garlic, minced

Salt and pepper, to taste

½ cup dry white wine, optional

½ cup creme fraiche, sour cream or mascarpone cheese

2 green onions, sliced (or chives)

1 cup parmesan cheese, grated

1 cup ciliegine mozzarella balls

1 lb pasta shells (or other) cooked & drained


In a large skillet, stir olive oil, butter, and mushrooms over medium heat. Cook for 3-4 minutes. Add in garlic, salt and pepper, and the white wine, if using. Cook for 1 minute while the mushrooms soak up the wine flavor. Stir in the creme fraiche and green onions. Taste and correct for seasoning. Toss with cooked pasta, and mozzarella balls; serve hot with parmesan cheese.
