Crispy Garlic Chicken Thighs and Potatoes

Crispy garlicky lemon butter bone-in chicken thighs bake on a bed of baby potatoes in the oven until golden-brown. An easy and delicious one-dish recipe. Inspired by Lisa Bryan of Downshiftology https://downshiftology.com/recipes/crispy-baked-chicken-thighs/#wprm-recipe-container-32681 

1 lb baby potatoes, if larger, cut in half or quarters

6 bone-in chicken thighs 

2 Tbsp olive oil

2 Tbsp butter, melted 

3 cloves garlic, minced 

2 tsp onion powder 

2 tsp garlic powder 

1 tsp paprika 

1 tsp oregano 

1 tsp salt 

1 tsp pepper, freshly ground 

Preheat oven to 425*. Place potatoes in one even layer in a large cast-iron or other heavy-bottomed skillet. Melt butter and mix with olive oil, garlic, onion powder, garlic powder, paprika, oregano, salt, and pepper. Place chicken thighs on top of the potatoes and coat them on both sides liberally with the seasoned garlic butter, ending skin-side up and spreading any remaining garlic butter over all.  Bake for 40-45 minutes or until the skin is beautifully browned and crispy with an internal temperature of 165* and the potatoes are fork tender when pierced. Serve with a generous spoonful of garlic butter over the chicken and potatoes.
