Greek Coleslaw

1 16-oz pkg tri-color coleslaw mix

1 cup cherry tomatoes, halved

1 cup cocktail cucumbers, diced 

½ cup Kalamata olives, halved 

½ cup castelvetrano olives, halved

4 green onions, sliced 

¼ cup fresh dill, chopped 

3 oz feta cheese, crumbled 

Dressing:

⅔ cup olive oil

⅓ cup red wine vinegar 

1 tsp oregano 

Salt and pepper, to taste 

Layer coleslaw, tomatoes, cucumbers, olives, green onions, dill, and feta cheese in a salad bowl. Whisk all dressing ingredients in a glass measuring cup, drizzle over the slaw, and toss just before serving.
