Frito Pie

Delicious frito pie with hamburger chili, corn chips, tomato, lettuce, avocado, cheddar, salsa, and sour cream. This quick one-dish dinner is perfect for these hot Summer days. Inspired by Brooks Lange at Recipe Boy https://www.recipeboy.com/wprm_print/southwest-frito-pie 

2 lbs ground beef

1 onion, diced

3 cloves garlic, minced

2 Tbsp taco seasoning 

Salt and pepper, to taste

2 cups pinto beans (or 1 can rinsed)

4 cups corn chips 

1 head butter or romaine lettuce, chopped

1 tomato, chopped 

1 avocado, diced

1 cup cheddar cheese, shredded

3 green onions, sliced 

⅓ cup cilantro, chopped 

Sour cream

Salsa

In a large skillet over medium heat saute the hamburger and onion together while breaking up the beef, until the onion is translucent, about 5 minutes. Stir in garlic, taco seasoning, salt, pepper, and pinto beans until heated through. In a large salad bowl, toss the lettuce, corn chips, tomato, avocado, cheese, green onion, and cilantro together. Top with the chili, sour cream, and cilantro and gently stir to distribute.
