Salmon Avocado Tacos

Salmon tacos with melty Oaxaca cheese, sliced avocado, crumbled cotija cheese, and a generous squeeze of lime. Simple, quick, and delicious.
1 tsp olive oil
2 fillets salmon
Salt and pepper, to taste
4 corn tortillas
Oaxaca cheese, cut 4 slices
1 avocado, sliced
3 green onions
½ cup cotija cheese, crumbled
¼ cup sour cream
1 lime, zested and juiced
1 lime wedged
cilantro, for garnish
Pickled onions, optional (linked below)
Preheat the skillet with olive oil, and cook salmon with salt and pepper over moderate heat for about 3-5 minutes or until done to your liking (check the middle with a fork or knife) cut salmon into taco-sized slices. Heat the tortillas on a griddle, or in a skillet with Oaxaca cheese until melted. Place tortilla on a plate with a portion of salmon, avocado, green onions, cotija cheese, pickled onions (if using), and cilantro. Whisk sour cream with lime zest and juice. Spoon sour cream over the taco and serve with a lime wedge.
