Garlicky Mushroom Green Bean Sauté

Garlicky green beans with sautéed mushrooms. Prepare an ice bath in advance for the green beans.

2 lbs green beans, rinsed and trimmed

4 Tbsp butter 

1 cup mushrooms, sliced

1 cup whole cremini mushrooms 

7 cloves garlic, minced

Salt and pepper, to taste

Bring a large pot of water to a boil. Add the green beans and cook for four minutes, then transfer to an ice bath (to help them retain their bright green color). In a large skillet, sauté the mushrooms in the butter. Cook until softened, then add garlic, salt, and pepper to taste. Stir in the green beans and cook for about 1 minute, then serve hot.
