Dill Salmon with a Cherry Tomato Caper Relish

6 portions Atlantic or Steelhead salmon

1 Tbsp olive oil

1 tsp fresh dill, chopped 

Lemon salt and pepper, to taste

Dill Yogurt Sauce:

1 cup Greek yogurt 

¼ cup mayonnaise 

3 Tbsp fresh dill, minced 

3 cloves garlic, minced

1 Tbsp red wine vinegar 

½ tsp dried dill

Lemon salt and pepper, to taste

Cherry Tomato Caper Relish:

2 cups cherry tomatoes, halved

2 green onions, chopped 

2 Tbsp capers 

1 Tbsp fresh dill, chopped 

Lemon salt and pepper, to taste 

Preheat oven to 400*. Drizzle salmon portions with olive oil in a 9.13 baking dish, sprinkle dill, and seasonings on top and bake for 12-15 minutes (or grill or pan-fry) to desired doneness.  

Mix yogurt, mayonnaise, dill, garlic, vinegar, and seasonings together in a serving dish. 

Mix tomatoes, green onions, capers, and dill with seasonings in a serving bowl. Serve salmon with yogurt, dill sauce, and tomato caper relish.
