Chicken Sausage Minestrone

Delicious minestrone with veggies, pinto beans, pasta, chicken sausage, and a generous grating of Parmesan cheese. 


2 Tbsp olive oil 

1 onion, diced 

1 cup celery, diced 

2 carrots, diced 

2 cups mushrooms, sliced 

3 cloves garlic, minced

1 quart chicken stock

3 chicken sausages, chopped 

2 cups cooked pinto beans (or 1 can rinsed and drained)

1 15-oz can diced tomatoes 

7 oz or 1 cup spiral or other small pasta

1 tsp oregano 

Salt and pepper, to taste 

Freshly grated Parmesan cheese, for serving 

5 cups baby spinach 

2 green onions, chopped 

2 Tbsp parsley, chopped 

Sauté onions, carrots, celery, mushrooms, and garlic in a stockpot with the olive oil until softened, about 5 minutes. Add chopped chicken sausage and stock. Simmer for about 10 minutes. Stir in the tomatoes, seasonings, and pasta, then cook for an additional 10 minutes. Add the spinach, parsley, and green onions, stirring until just wilted. Serve with a generous grating of Parmesan cheese.
