Creamy Caperberry Yogurt Dressing

This lovely dressing comes together quickly in a blender and doubles as a great sauce for grilled salmon. 1 cup Greek yogurt

½ cup mayonnaise

¼ cup large caperberries

1 Tbsp caperberry brine

½ cup shredded parmesan cheese

2 lemons, zested and juiced

3 cloves garlic, minced

1 Tbsp Dijon mustard

1 Tbsp whole grain mustard

2 Tbsp olive oil

Salt and pepper, to taste

In a blender, layer Greek yogurt, mayonnaise, caperberries, parmesan cheese, lemon zest, lemon juice, garlic, Dijon, whole grain mustard, olive oil, salt, and pepper. Blend until smooth. If you prefer a thinner dressing, add small amounts of water until it reaches the desired consistency.
