Creamy Caperberry Yogurt Dressing
Prep Time: 10 mins | Cook Time: 0 min | Course: Dinner | Serves: 2-3
Creamy lemony, tangy yogurt dressing (or dip) is loaded with briny bits of caperberries, you know, the larger variety https://www.tastingtable.com/925899/capers-vs-caper-berries-whats-the-difference/. This lovely dressing comes together quickly in a blender and doubles as a great sauce for grilled salmon. Inspired by (even if heavily adapted) Shanna Schad of Pineapple and Coconut. https://www.pineappleandcoconut.com/meyer-lemon-caesar-dressing/
1 cup Greek yogurt
½ cup mayonnaise
¼ cup large caperberries
1 Tbsp caperberry brine
½ cup shredded parmesan cheese
2 lemons, zested and juiced
3 cloves garlic, minced
1 Tbsp Dijon mustard
1 Tbsp whole grain mustard
2 Tbsp olive oil
Salt and pepper, to taste
In a blender, layer Greek yogurt, mayonnaise, caperberries, parmesan cheese, lemon zest, lemon juice, garlic, Dijon, whole grain mustard, olive oil, salt, and pepper. Blend until smooth. If you prefer a thinner dressing, add small amounts of water until it reaches the desired consistency.
