Cuban Picadillo on Rice

Flavorful Cuban-style picadillo with ground beef, onion, garlic, tomatoes, capers, green olives, and a tangy bit of olive brine. So delicious on a bed of rice. Inspired by Skinny Taste https://www.skinnytaste.com/picadillo-6-ww-pts/ 

1 onion, diced

1 Tbsp olive oil 

1 ½ lbs ground beef

3 cloves garlic, minced 

6 Roma tomatoes, diced

¼ cup large caper berries, chopped 

¼ cup green olives, halved

3 Tbsp olive brine juice

1 tsp cumin powder 

Salt and pepper, to taste 

¼ cup cilantro, chopped for garnish

Pot of rice, cooked 

In a large skillet, sauté onion in olive oil for about 5 minutes, until it begins to caramelize.  Add ground beef and garlic. Sauté until the beef is cooked through, about 5 minutes. Stir in tomatoes, capers, olives, olive brine, cumin, salt, and pepper, seasoning to taste. Serve on a bed of steaming rice.
