Glorioso Scallion Pasta Shells

Mushrooms, scallions & garlic cream sauce create this amazing pasta dish. In memory of Bosco’s Ristorante in Calistoga, this is a marriage of 2 of their amazing recipes; the Italian Scallion and Glorioso. Inspired by The Tastes of California Wine Country compiled by Sonnie Imes.

4 Tbsp butter

4 Tbsp olive oil

10 oz crimini or white mushrooms, sliced

Salt & pepper, to taste

Garlic salt, to taste

1 pinch red pepper flakes

3 cloves garlic, minced

16 oz pasta shells, cooked 

4 green onions/scallions, sliced

1 cup heavy cream

½ cup parmesan cheese, grated

In a large saute pan, melt the butter and olive oil over medium heat, add and saute mushrooms with seasonings and garlic until soft and cooked through. Stir in the hot-cooked pasta, scallions, heavy cream, and parmesan cheese. Top with additional parmesan at the table.
