Roasted Lemon Cauliflower with Creme Fraiche

Cauliflower roasted with lemon and butter is spooned over a bed of creme fraiche. I love the multi-colored cauliflower you can find these days. 16 oz cauliflower florets, extra points for multi-colored
4 Tbsp butter
1 Tbsp olive oil
¼ tsp salt
Freshly ground pepper, to taste
1 lemon, halved
8 oz creme fraiche
Sliced green onions or chives, for garnish
Preheat the oven to 375*. Lay cauliflower florets in a 9” square baking pan and drizzle with butter and olive oil. Sprinkle with salt and pepper, tossing to coat well. Cut the lemon in half and place in the pan. Bake for 30-40 minutes or until tender. Spread creme fraiche on a platter and spoon cauliflower on top pouring all the delicious butter-cooking juices on top. Gently squeeze the roasted lemon halves overall. Sprinkle with green onions or chives.
