Chicken Breasts and Gravy

Easy tender chicken breasts and gravy, are the perfect comfort food. Add a steaming bowl of mashed potatoes for smiles all around the table. In our family, we often double the amount of gravy, just in case there are leftover potatoes too. Inspired by Natasha Bull @ Salt and Lavender https://www.saltandlavender.com/chicken-and-gravy/ 

2 chicken breasts, sliced in half lengthwise

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

½ tsp oregano

Salt and pepper, to taste

2 Tbsp avocado oil

3 Tbsp butter, divided

3 Tbsp flour

2 cups chicken broth

¼ cup fresh parsley, chopped


Slice chicken in half so you have thin cutlets. Mix seasonings together and massage into the chicken on all sides. Heat the avocado oil over medium-high heat in a large skillet with 1 Tbsp butter. Add chicken in and cook for about 3-4 minutes per side or until done. An insta-thermometer will read 165*. Remove chicken onto a platter and keep warm. Add the rest of the butter into the skillet, then the flour, and cook for about 1 minute while stirring. Whisk in chicken broth and cook until thickened. Taste and correct for seasoning. Add chicken back into the skillet and rewarm, garnish with parsley.
