Chicken Parm Meatballs

Flavorful parmesan and chicken meatballs are tender and delicious whether you serve them with pasta or just top them with a touch of pesto or marinara and mozzarella cheese. Inspired by Jenny Rosenstrach of Dinner a Love Story http://www.dinneralovestory.com/chicken-parm-meatballs/  

1 lb ground chicken

½ cup bread crumb

4 Tbsp onion, diced 

4 cloves garlic, minced

4 Tbsp parsley

½ cup parmesan cheese, shredded + more on top

1 tsp salt

½ tsp garlic salt

Pepper, to taste

1 egg

½ small lemon, zested

3 Tbsp olive oil + a drizzle for the sheet pan

Preheat oven to 400*. In a large mixing bowl, combine ground chicken, bread crumb, onion, garlic, parsley, ½ cup parmesan, salt, garlic salt, pepper, egg, lemon zest, and 3 tablespoons olive oil. When well mixed, scoop by the tablespoonful and drop onto an oiled sheet pan. Top with an extra bit of parmesan cheese and bake for 15 minutes, then broil for a couple of minutes until the parmesan cheese topping gets golden brown.
