Gnocchi in a Tomato Cream Sauce with Shiitake Mushrooms

Delicious gnocchi cooks in a tomato cream sauce with shiitake mushrooms, onions, garlic, parmesan and topped with toasted pine nuts and basil.

½ cup pinenuts

1 Tbsp olive oil

1 cup shiitake mushrooms, sliced

½ cup onion

14-oz diced tomatoes

1 cup cream

14-oz potato gnocchi

3 cloves garlic

½ tsp oregano

Salt and pepper, to taste

½ cup parmesan cheese + more for garnish

1 green onion, sliced

Basil, for garnish

Toast pine nuts in a dry skillet for about 2 minutes over medium heat. Remove from heat and save for later. Add olive oil to skillet and sautee mushrooms and onion for 2-3 minutes. Add in tomatoes with their juices and cream. Push veggies to the side and add gnocchi in the middle so they are covered with the liquid. Cook for about 5 minutes. Add in the garlic, oregano, salt, pepper and parmesan. Stir until combined. Remove from heat and serve garnished with pine nuts, more parmesan cheese, green onions and basil.
