Mashed Cauliflower with Shiitake Mushrooms

Mashed cauliflower puree with cream cheese and butter and a saute of mushrooms with wine and cream sauce is the perfect accompaniment to a great steak. Inspired by Dawn Perry at Real Simple https://www.realsimple.com/food-recipes/browse-all-recipes/steak-mushroom-sauce 


1 cauliflower, quartered

¼ cup butter

4 oz cream cheese

½ tsp salt

Pepper, to taste

2 Tbsp olive oil

1 cup shiitake mushrooms, sliced

Garlic salt and pepper, to taste

½ cup dry wine, red or white

2 green onions, sliced

2 Tbsp heavy cream

½ tsp dijon mustard


Simmer cauliflower in water for about 20 minutes. In a food processor, puree butter, cream cheese, softened cauliflower, salt and pepper; keep warm. In a large skillet, saute mushrooms in the olive oil and season with garlic salt and pepper, stirring for 2-3 minutes. Add in the wine and reduce for 2-3 minutes longer over medium low heat. Stir in the green onions, cream and dijon and taste/correct for seasoning. Spoon the mushrooms over the mashed cauliflower.
