Greek Orzo Salad

A Greek-style orzo pasta salad with cherry tomatoes, red onion, crumbled, feta cheese, cucumber, Kalamata olives, and lots of fresh herbs.
16 oz orzo pasta, cooked and drained
1 tsp salt + more for pasta water
Pepper, to taste
1 tsp Italian seasoning
2 cups cherry tomatoes, halved
½ red onion, sliced thin
4 green onions, chopped
3 oz feta cheese, crumbled
1 cucumber, chopped
1 cup Kalamata olives (or green), halved
1 ¾ cups buttermilk
½ cups fresh herbs such as basil, mint, dill, oregano, and parsley
Cool and drain orzo pasta, while it’s cooling, cut tomatoes, red onion, and green onions. Mix in a bowl with crumbled feta, cucumbers, and olives. Stir in salt, pepper, and Italian seasoning. Stir veggies into the orzo along with buttermilk. Stir in fresh herbs and refrigerate to allow flavors to marry.
