Roasted Cherry Tomato Garlic Brie Pasta

Roasted cherry tomatoes with garlic, olive oil and brie melt deliciously into angel hair pasta. Brie always adds something special and if you haven’t had a brie-infused pasta before, this is going to melt your heart. 1.5 lbs cherry tomatoes 

15 cloves garlic, minced 

½ cup olive oil

Salt and pepper , to taste 

2 cups brie cheese, cubed without rind

3 green onions, chopped 

1 lb capellini or angel hair pasta, cooked and drained 

Basil chiffanade, for garnish 

Preheat oven to 400*. Roast tomatoes with garlic, salt, pepper and olive oil for 20 minutes. Remove from the oven and top with the cheese, green onions, additional salt, pepper, and basil. In a large pasta serving bowl, toss the pasta and roasted tomatoes with brie together. Serve piping hot.
