Green Enchilada Chicken and Pepper Jack Cheese Tacos

Green enchilada chicken and pepper jack cheese tacos are quick and easy to prepare under the broiler and oh-so-delicious. Saute chicken with green enchilada sauce and shred in a mixer before assembling and broiling.

1 Tbsp olive oil

4 chicken thighs

1 cup green enchilada sauce

12 corn tortillas

12 slices or 2 cups shredded pepper jack cheese

Olive oil spray

Sauté chicken thighs in olive oil and green enchilada sauce over moderate heat until chicken is cooked through, about 4 minutes per side, or until there is no more pink color when sliced open. Remove the chicken and shred it in a stand mixer with the paddle attachment or by using two forks. Return the chicken mixture to the enchilada sauce in the skillet and mix together.

Spray a rimmed baking sheet with olive oil spray and lay tortillas on it. Layer green enchilada chicken and pepper jack cheese on half of each tortilla and fold in half. Place under the broiler for 2 to 4 minutes until golden brown, flip the tacos, and cook the other side until golden brown.
