Steak and Mushroom Stir-Fry Soup

1 Tbsp olive oil
1 onion, diced
2 ribs celery, diced
1 lb beef round stir-fry strips
2 cups mushrooms, sliced
7 cloves garlic, minced
Salt and pepper, to taste
1 quart beef broth
2 green onions
¼ cup parmesan cheese, grated for garnish
In a dutch oven or soup pot, saute onion and celery in the olive oil over medium heat until onions are translucent, about 3-5 minutes. Add in the beef strips and mushrooms and cook 5 minutes more. Stir in the garlic, seasoning, and beef broth cooking until the soup is hot. Ladle into bowls and garnish with green onions and parmesan cheese.
