Green Onion Goat Cheese Biscuits

Green onion and goat cheese biscuits topped with flaky salt are amazing straight out of the oven while still warm. 2 cups flour
1 Tbsp baking powder
1 Tbsp sugar
1 tsp salt
½ tsp freshly ground black pepper
2 Tbsp green onions, minced
¼ cup cold butter, cubed
1 8-oz log goat cheese, crumbled
1 cup heavy cream + more for brushing
Flaky salt for topping
Goat Cheese Whipped Butter:
½ cup butter, softened
2 oz goat cheese
Preheat the oven to 400°. Line a rimmed baking sheet with parchment or a silpat, setting it to one side.
In a food processor, measure flour, baking powder, sugar, salt, and black pepper; pulse to combine. Add green onions, butter, goat cheese, and heavy cream. Pulse a few times until the dough just begins to come together ( I wanted the goat cheese to have chunks in the biscuits). Transfer to a lightly floured rolling surface. Using a bench scraper, fold the dough over itself a few times, shaping it into a rectangle about 1” thick. Use a rolling pin to flatten the top as needed. Use a pizza roller to cut into square biscuits (or a round cookie cutter to make round biscuits), and reroll scraps as needed. Place biscuits on the prepared baking sheet and brush with a little heavy cream. Sprinkle with a bit of flaky salt, then bake for 18 to 20 minutes or until golden brown.
Mix the butter and goat cheese as a delicious spread for the warm biscuits straight out of the oven.
