Steak Onion Grilled Cheese with Mozzarella

Shaved beef steak sautéed with onions and oregano are the perfect flavor combination for a mozzarella sourdough grilled cheese. Dip in your favorite cup of soup. I like to melt cheese on both sides of the bread so it holds the meat and onions securely.
1 onion, sliced
1 Tbsp olive oil
2 lb shaved beef steak, I find at Trader Joe’s
Salt and pepper, to taste
1 tsp oregano
8 slices fresh mozzarella cheese
8 slices sourdough bread
Butter
Slice the onion and place on a griddle or in a skillet over moderate heat. Stir occasionally until softened and lightly caramelized. Add shaved beef steak and sauté 2 minutes longer or until cooked to your desired doneness. Season with salt, pepper, and oregano. Butter bread and add to the griddle (buttered side down) or skillet and top with cheese. Top half of the slices with meat and onions. When the buttered side of the bread is golden and the cheese is melty, place the top on the sammie’s and serve.
