Salsa Verde Sour Cream Chicken

Chicken thighs smothered in a sour cream salsa verde sauce with cheddar cheese. Perfect with a pot of rice, or try with the sour cream rice linked below. 

6 chicken thighs 

1 Tbsp olive oil

Salt and pepper, to taste 

1 tsp oregano 

7 cloves garlic, minced

1 cup salsa verde

½ cup sour cream

1 cup cheddar cheese, shredded
Pat the chicken thighs dry with paper towels, and season with salt, pepper, and dried oregano. Place in a hot skillet with the olive oil and cook over medium heat for about five minutes per side. Add garlic, salsa verde, and sour cream. Stir in and cook for one minute. Test to ensure the chicken is cooked through. Top with shredded cheddar cheese and place a lid on top, turning the heat off. When the cheese has melted, serve with rice or the sour cream rice linked below.
