Grilled Steaks with Blue Cheese and Green Chile Sauce

Mouthwatering juicy steaks grilled and topped with blue cheese and green chile sauce. We love steaks cut thick and often buy and cut the tenderloin or New York slab from Costco. 1 Tablespoon olive oil
4 filet mignon , New York, or ribeye teaks, cut 1 ½ -2” thick
Hawaiian salt and freshly ground pepper, to taste
7 cloves garlic, minced
2 green onions, minced fine
Blue Cheese and Green Chile Topping:
4 Tablespoons cream cheese, softened
¼ cup blue cheese crumbles
1 Tablespoon canned mild green chiles, drained
1 green onion, minced fine
1 teaspoon red wine vinegar
salt and freshly ground pepper, to taste
Marinate steaks with olive oil, salt, pepper, garlic and green onions for half an hour at room temperature or longer in the fridge.
Mix cream cheese, blue cheese, green chiles, green onion, vinegar, salt, and pepper in a mason or other wide mouth lidded jar.
Grill steaks over high heat for 4 minutes, turn and grill until medium-rare or to desired doneness. Pull at 115* for rare - 120* for medium-rare - let rest for 5 minutes on a platter, tented with foil. Serve with a generous dollop of blue cheese sauce.
