Lemon Garlic Sour Cream Pasta

Lemon, garlic, and sour cream with parmesan cheese, green onions, and spinach grace these pasta shells in a lovely rich silky sauce. A quick dinner that comes together easily. Inspired by Amy Fulwood of The Cook Report https://thecookreport.co.uk/lemon-garlic-sour-cream-pasta/
16-oz pasta shells, cooked
½ cup butter
3 cloves garlic, minced
1 cup sour cream
¾ cup parmesan cheese, grated
1 cup heavy cream
1 lemon, zested and juiced
½ tsp salt
Garlic salt and pepper, to taste
8 oz fresh spinach
3 green onions, chopped
Cook pasta shells or your favorite pasta per package instructions. Melt butter in a large skillet and stir in the garlic, cook for 1 minute, add in the sour cream, parmesan cheese, heavy cream, lemon zest and juice, and seasonings. Let simmer for about 5 minutes. Stir in the hot cooked and drained pasta and the spinach. Remove from heat and top with green onions (or parsley) and additional freshly grated parmesan or pecorino cheese.
