Mahi Mahi with a Green Onion Cheddar Sour Cream Sauce

Mahi mahi baked with lemon and garlic, topped with a green onion sour cream sauce and sharp shredded cheddar cheese melted on top. Perfect with a pot of sticky rice. Inspired by breezermom at Food.com https://www.food.com/recipe/fish-and-sour-cream-bake-424933 

4 mahi mahi fillets

1 Tbsp olive oil

2 Tbsp lemon juice

4 cloves garlic, minced

Salt and pepper, to taste


Sour Cream Sauce:

¼ cup sour cream

¼ cup mayonnaise

2 Tbsp lemon juice

1 green onion, chopped

Garlic salt and pepper, to taste

½ cup sharp cheddar cheese, shredded

Marinade mahi in a ziplock bag with the olive oil, lemon juice, garlic, salt and pepper. Keep in the refrigerator until ready to bake. Mix the sour cream, mayonnaise, lemon juice, green onion, garlic salt and pepper together in a glass measuring cup. Preheat oven to 350*. Place fish and marinade in an 8” baking dish. Bake for 12-16 minutes until fillets are opaque and cooked throughout. Top with the sour cream sauce and sprinkle the cheese over the top. Return to the oven and bake for 4 minutes more.
