Mushroom Chicken in Sour Cream Cheddar Sauce

4 bone-in chicken thighs, rinsed and dried 

1 Tbsp olive oil

1 onion, diced 

2 cups mushrooms, sliced 

3 cloves garlic, minced

2 Tbsp flour 

1 cup heavy cream 

1 cup sour cream 

2 cups cheddar cheese, shredded 

Preheat the oven to 400°F. Season chicken thighs with salt and pepper. Preheat the skillet and cook chicken thighs skin-side down in olive oil over medium-high heat for 5 minutes on each side. Then, remove the chicken to a plate and keep it warm. Add onion and mushrooms to the skillet, and cook for about 5 minutes or until the onion is softened. Stir in garlic, flour, cream, and sour cream. Stir for 1 minute, adding seasoning as necessary, then nestle the chicken back in the skillet and top each portion with a generous handful of cheddar cheese. Bake for 20 minutes, then check to make certain that the chicken is done and registers a minimum of 165°F.
