Peach Cherry Panzanella Salad

Summer peaches and cherries star in this Panzanella, a beautiful bread salad with burrata cheese and a champagne vinaigrette. 

4 cups sourdough bread, cubed 

1 cup red onion, sliced thin

½ cup olive oil

2 cloves garlic, minced 

Salt and pepper, to taste 

2 peaches, diced

1 cup cherries, halved and pitted

1 burrata ball, diced

¼ cup olive oil 

2 Tbsp champagne vinegar 

½ tsp Dijon mustard 

Preheat a large skillet with olive oil and fry the bread and red onion together until golden. Stir in the garlic, then transfer to a salad bowl and toss with salt and pepper. Just before serving, add diced peaches, cherries, and burrata cheese on top. Whisk olive oil, champagne vinegar, and mustard together and drizzle over the salad, tossing to stir.
