Zucchini Corn with Lime and Parmesan Cheese

4 medium Green or yellow zucchini, sliced 

2 cups corn, fresh, frozen, or roasted

2 Tbsp olive oil 

3 cloves garlic, minced 

1 tsp Italian seasoning 

Salt and pepper, to taste 

¼ cup cilantro, chopped 

2 limes, zested and juiced 

Parmesan cheese, freshly grated

Sauté zucchini and corn in olive oil for about 4 minutes. Stir in garlic, Italian seasoning, salt, and pepper. Remove from the heat and stir in the cilantro, lime zest, and juice. Serve with a liberal amount of freshly grated Parmesan cheese.
