Philly Cheesesteak Burritos

Thinly shaved beefsteak is sautéed with onions, mushrooms, garlic, and melted mozzarella cheese, then folded burrito-style.
2 Tbsp olive oil
1 onion, diced
2 cups mushrooms, chopped
1 lb shaved beef steak, found at Trader Joe’s (or other tender steak, thinly sliced)
3 cloves garlic, minced
1 Tbsp Dijon mustard, + more for serving
Salt and pepper, to taste
8 oz mozzarella cheese pearls
1 tomato diced
4 burrito-sized flour tortillas, warmed
Sauté the onion and mushrooms in olive oil in a large skillet. Season with salt and pepper and cook until the onion is translucent and the mushrooms have softened. Stir in shaved beef, steak, or other thinly sliced tender steak along with the garlic. Cook for 2 to 3 minutes or until the steak is cooked to your liking. Stir in Dijon mustard, mozzarella cheese, and tomatoes, and add more salt and pepper to your taste. Warm the tortillas in a skillet for 30-60 seconds per side, then fill with the Philly cheesesteak mixture. Wrap them up and serve with extra Dijon mustard as desired.
