Mushroom Orzo Pasta

Creamy mushroom orzo pasta in a cream cheese sauce with mushrooms, garlic, and cherry tomatoes; extreme comfort food. Sprinkle green onions and a grating of Parmesan over the top just before serving. 


16 oz orzo pasta, cooked per directions 

8 oz sliced cremini mushrooms 

1 Tbsp olive oil

Salt and pepper, to taste 

3 cloves garlic 

2 cups cherry tomatoes, halved

4 oz cream cheese 

1 cup heavy cream or sour cream 

3 green onions 

Freshly grated Parmesan cheese, for serving with 

In a large skillet, sauté mushrooms in olive oil for 3-5 minutes or until softened and season with salt and pepper. Stir in garlic, cream cheese, sour or heavy cream, and tomatoes. Stir in hot orzo pasta and stir until the cream cheese has melted. Stir in green onions and serve with freshly grated Parmesan cheese.
