Creamed Spinach and Chicken

Creamed spinach cooks with chicken thighs for a one-dish entree. This elegant cheesy dish is great spooned over mashed potatoes, roasted baby potatoes, or even rice. My favorite mashed potatoes are linked below.
5-6 chicken thighs, dried between paper towels
2 tbsp olive oil
1 onion
8 oz sliced mushrooms
Salt and pepper, to taste
7 cloves garlic, minced
2 Tbsp butter
2 Tbsp flour
1 lb spinach
½ cup sour cream
Mozzarella cheese
Green onions, sliced
Sauté chicken, onion, and mushrooms in olive oil and season with salt and pepper for 4 minutes. Flip the chicken over and cook for 4 more minutes, until the onions are softened and translucent and the chicken is cooked through. Stir in garlic, butter, flour, and spinach. Stir for 1 minute and turn off the heat. Stir in sour cream and top with a generous portion of mozzarella cheese. Place a lid on top so the cheese melts. Top with green onions after 1 minute and serve hot with mashed or roasted potatoes.
