Olive and Brie Grilled Cheese

Olive bread and brie make the best grilled cheese. The tartness of the olives and the richness of the brie are a perfect combo with the crispy crunch of the griddled bread.

Olive bread, sliced

Double cream brie cheese, sliced (such as fromager d’affinois)

Butter, softened

Butter one side of the olive bread and place the butter side down on a griddle or skillet. Top with brie cheese and the other slice of bread, and butter the top side. Grill a couple of minutes on each side, until golden crusty with melty brie.
