Orange Cashew Cauliflower

1 head cauliflower, cut into florets
1 cup cashews
1 Tbsp sesame seeds
1 green onion, chopped
Orange Sauce:
1 orange, zest of
½ cup orange juice, fresh squeezed
¼ cup rice vinegar
2 Tbsp sesame oil
1 Tbsp soy sauce
2 Tbsp sweet garlic chili sauce
1 tsp ginger, grated
1 clove garlic, minced fine
1 Tbsp cornstarch
2 Tbsp brown sugar
¼ tsp aleppo pepper sauce or chili flakes
Preheat oven to 400*. Place cauliflower in an 8” square pan and roast in a preheated oven for 15 minutes. Meanwhile, make and cook the orange sauce. Remove the dish from the oven and add cashews and a good amount of the orange sauce, enough to nicely coat. Bake for another 15 minutes. Remove from the oven and top with the sesame seeds and green onions. Serve with extra sauce on the side.
Mix orange zest and juice, rice vinegar, soy sauce, sweet garlic chili sauce, ginger, garlic and cornstarch together in a small saucepan. Whisk till cornstarch is mixed in. add brown sugar and pepper sauce or chili flakes. Warm over medium-low heat until slightly thickened.
