Chinese Crispy Meat Pies

Crispy handheld meat pies with green onions and sesame seeds. I like to serve them with sweet garlic chili sauce; a more traditional sauce would be a bit of chili oil. Inspired by the lovely Tiffy of Tiffy Cooks https://tiffycooks.com/the-best-chinese-crispy-meat-beef-pies/ 


Dough:

2 ½ cups of flour 

1 tsp of salt 

1 cup warm water 

1 tbsp of olive oil 


Meat Filling:

1.5 lbs of ground meat, turkey or beef 

½ cup onion, chopped

6 green onions, chopped

2 cloves garlic, minced

1 Tbsp ginger, grated

1 Tbsp of oyster sauce 

1 Tbsp of soy sauce 

1 tsp garlic salt

1 tsp of black pepper 

¼ cup of water 


1 tbsp black sesame seeds 

1 tbsp white sesame seeds 

2 Tbsp frying oil


In a mixing bowl, stir flour, salt, warm water and olive oil together. Mix with a wooden spoon until nearly mixed. Turn out onto a lightly floured surface and knead for a couple of minutes until all ingredients are fully incorporated. Form dough into a nice round and allow the dough to rest for 30 minutes while making your meat filling. 


In a mixing bowl, stir turkey or beef (or a mix of each), onion, green onions, ginger, oyster sauce, soy sauce, salt, pepper and water together. 


Cut the dough in half  four times, until you have 8 equal sized pieces. Make rounds in the palm of your hands, then roll into circles. Fill with 2-3 Tbsp of meat filling. Fold edges up and together; twist to tightly enclose the meat. Press the smooth side into sesame seeds. 


Add 2 Tbsp peanut or avocado oil to a large skillet and preheat over medium low heat. Add the pies into the heated skillet sesame side down without letting the pies sides touch each other. Cook until golden brown, adjusting heat as necessary for about 4 minutes a side. Cut one in half to make sure meat and dough are fully cooked all the way through.
