Corn Cakes with Goat Cheese Sauce

Corn cakes with green onions and cilantro topped with a lemon zesty whipped goat cheese sauce.
¾ cup flour
½ tsp baking powder
½ tsp cumin
Garlic salt and pepper, to taste
2 cups corn, fresh or frozen
2 green onions, chopped
¼ cup cilantro, chopped
1 egg
¾ cup yogurt or sour cream
2 Tbsp butter
2 Tbsp olive oil
5 oz goat cheese
½ cup heavy cream
Zest of 1 lemon
½ a lemon, juiced
Whisk flour, baking powder, cumin, garlic salt and pepper together in a 2 quart mixing bowl. Mix in corn, green onions, cilantro, egg and yogurt together. Heat a frying pan (or griddle) with the butter and olive oil over medium heat. Drop corn cakes by 2 Tbsp full and fry for about 3-4 minutes a side cutting into one to be certain they're done.
Whip goat cheese, cream, zest and juice of the lemon half in a mixing bowl until the consistency is creamy. Serve next to the corn cakes.
