Oven Fried Chicken Tenders

Oven-fried chicken tenders are soaked in milk which makes them very tender, and then baked with butter in a panko crust. These are great with a pot of rice and mock chick fil-a sauce (linked below) or also would be great with pasta and marinara sauce. Inspired by Dan at Cakes Cottage.

2 lbs chicken tenders (or 4 breasts cut into 3 strips each)

1 cup milk

¼ cup butter, melted

1 cup flour

½ cup panko crumbs

2 tsp paprika

1 tsp dried parsley

1 tsp salt

1 tsp garlic granules

½ tsp freshly ground cracked pepper

Place chicken tenders in a Ziploc bag and add milk to cover, zip up the bag and place it in the fridge for about 30 minutes to soak and tenderize. Preheat oven to 400°. Melt the butter and place in a 9 x 13 pan swirling to coat. In another Ziploc bag, shake together flour, Panko breadcrumbs, paprika, parsley, salt, garlic granules, and pepper. Shake milk, off half of the chicken and add to the breadcrumb bag. Shake to coat thin lay chicken in the 9 x 13 pan. Repeat with the rest of the chicken. Bake for 10 to 12 minutes. Flip the chicken with a pair of tongs and bake for another 10 to 12 minutes, testing to see that the chicken registers a minimum of 165° with an instant thermometer.
