Pan Fried Cheesy Beef Tacos

1 ½ lbs lean ground beef
½ tsp salt
Freshly ground pepper, to taste
1 small onion, diced
2 cloves garlic, minced
1 tsp chili powder
½ tsp cumin
½ tsp oregano
14 oz can diced tomatoes
½ cup salsa verde
½ cup olive slices
6 8-inch flour tortillas
3 cups shredded cheddar or mexican blend cheese
Garnish with pico de gallo, sour cream and guacamole
Saute beef with salt and pepper in a large skillet over medium high heat, breaking up beef into small chunks. Stir in onion and garlic, chili powder, cumin and oregano. Cook until the onion is translucent and beef is cooked through. Add tomatoes, salsa verde and olives. Cook for about 5 minutes as the sauce simmers and juices are absorbed. Take off heat. Spray a medium skillet with olive oil cooking spray and cook a tortilla over low heat. Cover the tortilla with a small handful of cheese, spread a spoonful of beef mixture over half of the tortilla and cook till cheese is melty and the underside of the tortilla is browned. Fold and remove from the skillet; repeat. Serve with pico de gallo, sour cream and guacamole.
